The Holidays just got a WHOLE LOT happier!!!!
Some people don’t necessarily enjoy the holidays.. rather they just get through them. Whether it’s because of a fight with a family member or the absence of another family member- for some, Holidays aren’t very “Jolly.”
And we who aren’t always so glad to go to our parents…or in-laws… choose to deal with it all in different ways. And some of us like to deal with the frustration in way of beverages.
OK we aren’t talking about a type of soda or a nice glass of iced tea. No- we’re talking about something with a little more kick. And that could only be alcohol!
And because of that, many lovely people have made some pretty lovely recipes involving the best of boozes. Some of the greatest boozy recipes we’ve found are made specifically by Countryrebel.com.
Recently they made recipe for “Festive Fireball Fudge” which includes fireball whiskey. (HELLO!) And now they’re back with an even more amazing recipe…. Fireball Caramel Popcorn!!
It’s just as amazing as you’d think it is. Here’s how Country Rebel explained their amazing recipe!
“Fireball Spiked Caramel Corn takes takes a traditional caramel corn recipe and kicks it up a notch with just the right amount of cinnamon whisky. The Fireball taste is mild, but gives the snack a perfect punch of flavor. This recipe yields enough for you to get your fill while leaving plenty to share.”
Basically it’s a classic caramel corn with a bit of a kick… that kick is called Fireball whiskey. Here’s the full recipe and directions below:
FIREBALL SPIKED CARAMEL CORN
12 cups popped popcorn
1 stick salted butter, softened
1 cup dark brown sugar
1/4 cup Fireball Whisky
1/4 cup light corn syrup
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
3/4 teaspoon vanilla extract
1/4 teaspoon cinnamon extract
Preheat oven to 300 degrees F.
Place popcorn in an extra large bowl. Line a large baking sheet with foil and spray with non-stick cooking spray and set aside.
Put butter in a large microwave-safe bowl. Microwave on high for 30 seconds, or until mostly melted. Stir in brown sugar, Fireball, corn syrup and cinnamon. Microwave on high for 4 minutes, stirring every 30 seconds or so.
Remove the bowl from microwave and stir in baking soda, vanilla extract and cinnamon extract. Pour over popcorn and stir until well coated. Spread popcorn on prepared baking sheet and bake for 18 to 20 minutes, stirring every 5 minutes.
Remove popcorn from oven and allow to cool completely before eating or serving. Enjoy!
Country Rebel also advised everyone that if you’re using microwaved popcorn go for either unsalted or low salted popcorn.
